Fish delivery and more

Still bad weather in Japan effects some fish delivery. We could not get Seki-Aji, Iwashi this time. A lot of snow is coming to northern part of Japan in a few days.

I think same as here. Giant clam is not available. It comes from WA area. I have not seen Giant clam for 10 days.

Uni is also not available but will come on Friday. Our supplier says "maybe". Maybe means sure or more than 50% of possibility?

Weight Control and Golf

I almost give up to lose weight. I just keep it around 165lbs this time. Busy business makes me stress and I eat more than average sometimes and eats some sweets. Sweets make me calm down, realx and wines are also good medicine for me.

So, choosing lose weight, get stress and choosing a little bit over weight, being happy?

I prefer being happy.

Golf game? I shot 46-46-92. I lost $6 from a guy but gained more money from another guy. I did not lose money as a result.

Frying potatoes to make chips or French fries produces a potent chemical carcinogen called acrylamide.

It's not just the high fat content that makes potato chips and French fries bad for you; the very process used to cook them produces potent carcinogens inside the potatoes themselves.
Baking, roasting or frying any starchy food at high temperatures causes the sugars found in these foods to combine with an amino acid to produce high levels of a potent carcinogen known as acrylamide. Because all potato chips must be cooked at high heat, and because restaurants tend to cook French fries at high temperatures to bring them to the table more quickly, a healthy diet should contain only minimal quantities of these foods.

For people willing to go to a little extra effort to make French fries at home, there are ways to minimize acrylamide content. Potatoes should be stored outside the refrigerator in a cool, dark place. Before frying, they should be sliced, soaked in water for 15-30 minutes, then patted dry. They should be fried at lower temperatures for less time, until they are golden yellow -- not brown.

Commercial food producers sometimes use the same frying oil for weeks at a time, saturating the oils with extremely high acrylamide levels.
Importantly, even though it's found in the food, acrylamide does not have to be listed on any food labels.

Grapes found to help prevent age-related blindness even better than lutein

Lutein has long been hailed for its ability to help protect against, and even reverse, the devastating effects of age-related macular degeneration. But a new study published in the journal Free Radical Biology and Medicine suggests that grapes may work even better than lutein at mitigating age-related blindness due to their high levels of antioxidants.

For her study, Dr. Silvia Finnemann, PhD, from Fordham University's Department of Biological Sciences evaluated three groups of rats fed varying diets. She gave the first group of rats a diet enriched with added grapes, the second a diet enriched with lutein, and the third a normal diet. At the conclusion of the study, the grape group experienced significant protection against oxidative damage, even more so than the lutein group.

"The protective effect of the grapes in this study was remarkable, offering a benefit for vision at old age even if grapes were consumed only at young age," said Dr. Finnemann. "A lifelong diet enriched in natural antioxidants, such as those in grapes, appears to be directly beneficial for RPE (retinal pigment epithelium cells) and retinal health and function."

Age-related macular degeneration is a condition that afflicts millions of elderly people worldwide every single year, and is said to be the number one cause of blindness in this age category. When the photoreceptors in the retina begin to lose their function either because of metabolic waste buildup or oxidative damage, vision loss begins to set in and run its course -- and this is a gradual process that happens over time.

But grapes, with their high levels of flavonoids like quercetin and resveratrol, are able to prevent this buildup of metabolic waste, also known as lipofuscin, in RPE, as well as protect metabolic pathways against oxidative damage. So consuming grapes, preferably beginning at an early age, is a great way to help maintain vision and ensure that the macula, which is the central portion of the retina, does not deteriorate and cause blindness.
